Natamycine

Natamycin, also known as pimaricin, is a polyene macrolide antifungal agent produced by certain strains of Streptomyces bacteria. It exhibits a broad spectrum of antifungal activity and is particularly effective against yeasts and molds, including Candida, Aspergillus, Fusarium, and Penicillium species. Unlike many other antifungal agents, natamycin does not work well against bacterial pathogens.

About Natamycine:

Appearance: typically white to yellowish-white.

Solubility in Water: Natamycin is sparingly soluble in water and soluble in organic solvents.

Thermal Stability: Natamycin is relatively stable to heat, making it suitable for use in foods that undergo pasteurization.

pH Stability: Natamycine exhibits good stability across a wide pH range, maintaining its antifungal activity in foods with varying acidity levels and in pharmaceutical formulations.

Dairy Products: Natamycin is extensively used as a surface treatment for cheese and dried sausage casings to prevent mold and yeast growth, thereby extending the shelf life of these products without affecting their taste or nutritional value. It is particularly valuable in cheeses, where it prevents surface mold growth while allowing the cheese to mature and develop flavor.

Baked Goods: It can be applied to the surface of baked goods to prevent mold growth, especially in products with a long shelf life.

Beverages: Natamycin is sometimes used in the beverage industry, for instance, in wine and fruit juices, to inhibit the growth of yeasts and molds that can spoil the product.


Pharmaceutical Industry:n5Ophthalmic Antifungal: Natamycin is the only antifungal drug approved by the FDA for the treatment of fungal keratitis, a serious eye infection caused by fungi. Its efficacy against a wide range of filamentous fungi and yeasts, coupled with poor absorption into the bloodstream when applied topically, makes it an ideal treatment for eye infections.
